This knife has a 150mm blade hand forged from "Aogami Super" high carbon tungsten steel, specially formulated by Hitachi Steel for traditional forged knives, sandwiched between two outside layers of stainless steel.
The stainless cladding requires little maintenance, but the core remains reactive, and as with the natural handle material must be maintained as per the care instructions given on this website.
The hexagonal handle is made from oak that was killed 3,000 years ago by the rising water of the Anglian Fens, fell, and was preserved in the tannic water- bog oak.
