This is a smaller hand forged kitchen knife (known as a "petty") featuring a blade with a Japanese Hitachi "Aogami Super" core/edge clad with stainless steel. This steel is heat treated to very high hardness, and the edge is very thin. It is purely for use in cutting vegetables and boneless meat and may fail if subject to abuse. The octagonal handle is made from English bog oak.
