This gyuto/chef knife was forged from Japanese Aogami Super carbon steel laminated with stainless steel. That mean the sides are stainless but the edge will patinate like regular steel. The hexagonal section handle is carved from semi-fossilized Anglia bog oak.
The edge on this knife is, like all my knives, very fine and quite hard, to be used for cutting vegetables and boneless meats only
