The blade of this gyuto was forged from a bar of Austrian high carbon steel (Bohler K510). It is of "integral bolster" construction, meaning that the bolster, blade and tang are all of one piece. The hexagonal handle is made from 3000 year old Anglian bog oak. This knife has a beefy blade with distal taper from ca. 6mm above the heel down to less than 0.5mm @ 5mm from the tip. It has a "forward" balance very suited to pinch grip.
