This gyuto-ish knife was forged from a solid bar of high carbon Austrian silver steel (not stainless!), the hexagonal section handle is carved from semi fossilised oak that collapsed into the anglia Fens some 5000 years ago when water levels rose and swamped Eastern England. The grind is a very shallow convex, bordering on flat. The profile is slender but a robust spine carries the weight slightly forward.
I have file finished the handle and bolster (see photos) , rather than using sandpaper, I think it is a finish that will age and patinate well.
The edge on this knife is, like all my knives, very fine and quite hard, to be used for cutting vegetables and boneless meats only
